Wine Country.....In Colorado?!

How many folks reading this (I'm sure there aren't many of you) think of wine and Colorado? If you're not from here, then it's probably not your first thought. But sure enough, about four hours west of Denver you can find the cutest little town called Palisade, that is winery after winery.

I had been there once before on a girls trip, and always wanted to go back and take Bryan. In 2017, a group of friends decided to plan a trip out west. Unfortunately, due to Bryan's school schedule, we wouldn't be able to go the same day as everyone else, but we still wanted to make it happen. So while our friends headed for a Saturday-Sunday trip, we pushed it back by one day. Sunday morning we loaded up in the car, dropped the pup off at doggie daycare and headed west. Our first stop was to park our car at our hotel, the Wine Country Inn, and unload our bikes. While there are some great Airbnb's and other places to stay in town, I highly recommend this hotel. The price is RIGHT, the accommodations are beautiful, and breakfast and a wine tasting are included in the price of the room. Plus, it's right in the middle of some vineyards and walking distance to three tasting rooms!

The wineries in Palisade are all within blocks, maybe miles, of each other, very close. Plus,
the town itself is relatively flat. So if you are heading out here, you'll want to ride bikes from winery to winery. We have our own, so brought them out with us so we could save the money on rentals. So we rode our bike to downtown Palisade, where we had brunch at the Palisade Cafe, and then were off! Most of the wineries in Palisade actually offer free tastings, which is all the more reason you need to do this trip! (Seriously, go book it now, I'll wait). There are a few that have started charging, but the fee is nominal - $5 - and you can apply that to any purchases you choose to make. I've never been to Napa Valley or Sonoma, but I hear that tastings out there can START at $25. Deal alert!

We biked from winery to winery, enjoying the beautiful weather, and my basket is a perfect fit for a couple of wine bottles we purchased. :) We wrapped up the day at my favorite spot in Palisade, Maison La Belle Vie. I love this place for many reasons, one is the long gravel driveway leading up to it, the other is the incredible patio where you can sit, relax and have a snack, and also - the wine. It's pretty delish. :) Here we ordered a bottle to sit and drink on the patio and, of course, made some friends. Because that's what we do when we travel and have been drinking - ha!

All in all, the day was pretty incredible. We rushed back to one of the wineries before it closed so we could make a purchase (they had a sale closing that day) and then ended with dinner at our hotel. It was a great getaway for Bryan and I, but we were bummed to not enjoy it with our friends.....there's always next year! We have now made it an annual trip - wine not?! Ha!

Reel em in!

Remember that post a few weeks back? The one where I said we went to Oregon and were bummed we missed the opportunity to salmon fish? Well, after having the chance to halibut fish, I knew we HAD to get to Oregon to do some salmon fishing! So in the fall of 2017, we made it happen.

Bryan and I headed up to Oregon for a few days, first stopping again to see his grandma, and then back down to Winchester Bay, where we would be sleeping. We met his dad and stepmom at the hotel, before heading for dinner at Bedrocks on the Bay, my new favorite Oregon restaurant! When you go, make sure and get the clam chowder bowl and a pizza - you won't regret it!

We had to head to bed early because we needed to be out on the water by 6am. Since it was August, ie fall fishing, the key to salmon fishing is to get in the water before the sun rises, because you want to try and catch fish when the tide is coming in or out. So we got up early, Bryan's dad got the boat in the water and then we took off. Because we are so close to the ocean, and the way the water moves, therefore, the way the fish swim, the boat is trolling at a slow pace. We would get moving and Bryan's dad would help us get our rods in the water and into the rod holders and just wait and see what we could catch!


Before leaving for this trip, I had gone on and on about how we needed space to bring some salmon back. It wasn't until the day before we left that Bryan said - you know we might not catch any right?! It was like a punch to the gut. Whoa. I mean, of course there's a chance we wouldn't catch any, but I hadn't thought about that possibility at all. I legit was prepared to catch fish all day long. Whoops. Thanks, babe, for the reality check.

And good thing too, because the entire first day, we didn't catch anything. Bummer! But we weren't alone. Bryan's dad is such a pro, that he is friends with all of the guides. In fact, he is always being asked why he doesn't become a guide for real, but he said he only wants to fish with friends and family. Their loss, our win. :) Since he is friends with the other guides, we had heard that the fish weren't biting much at the time, and we could see that the other boats were having slow days also. At least we weren't alone!

The next morning, though, was our time. I think it was around 7am, and I had started to doze off when Bryan said his usual 'oh shit' and his dad said 'fish fish fish' - which means - GO! As it turns out, it was my rod which had a bite. So the fun began! Everyone had to reel in the other lines, so it was just mine in the water, to not tangle them up. Truthfully, I don't remember much because it all happened so fast. What I do recall is that I reeled and reeled, and when I looked at the line counter, the number was the same as when I started.....this little stinker was pulling hard! I needed to reel faster to bring it in. Low and behold, I brought it in and we got it on the boat - woohoo! My first salmon!

After catching it, we had to take some measurements, write the details on my fishing license and then get the rods back in the water as quick as possible. Often times, there are other fish around when you catch one, because they are in a school, so you want to get rods back in fast. In fact, we didn't have all of the rods in and Bryan had one on his pole! Unfortunately, it broke away before he had too much time to try and reel it in. After the rods were in, it was time to celebrate with the konk can. The what?! On board is a konk can (ie, flask) to celebrate following a catch! It's called konk, because you have to 'konk' the fish to make sure it's really dead after bringing
it in. (Sorry to anyone bothered by that). So time to konk - everyone takes a shot - of fireball! That'll wake you up in the morning! After that, the excitement and adrenaline had us going for a while. Unfortunately, we didn't have much luck after that, so mine was the big winner for the trip - a 20 pound winner! 

While it was sad to not go home with more than the one, I was thrilled to show off my catch! As the day wound down, we headed back to town where Bryan's dad filleted the fish for us, and we packed it up. I was hooked (ha) on fishing and couldn't wait to come back again!

A Vegas Graduation

For anyone who knows Bryan and I, you know that the majority of our relationship has involved him being in school. A regular phrase out of our mouth 'Bryan has to study, we can't go', or something along those lines. So when the end was in sight, and graduation was near, I knew we had to do something to celebrate. Not only for him, but for me - ha! That's how it works, right? Plus, he was the first in his fam to graduate from college - extra reason to party!

Combine this upcoming activity with the fact that I love to win, and our next vacation was planned. You might be really confused right about now, so let me explain. Yes, I love to win, no matter what it is. In fact, Bryan and I have to play on the same team for whatever it is we're doing, because I love to win so much, I would get grumpy with him. This 'winning' also includes charitable items. When I go to an event and there is a silent auction or chance drawing, I love to throw my name in for it. If I end up having the highest bid, I always say 'I won'! And then, oh yeah, I actually have to pay for that. Well that worked to our advantage in this case, because what I 'won' was two nights at the Golden Nugget in Las Vegas, just what we needed!

Graduation weekend, we had a lot of family in town, threw a huge party at the house to celebrate, and just when everyone left town, we got on a plane and headed to Vegas! We landed around 10am and headed to Fremont Street. Both of us were looking forward to being on Fremont Street because we hadn't spent much time there and our first stop was, of course to get a drink! We walked up and down the street, people watching and sipping on cold drinks. We found a lot of humor out of the signs to get 'fake married' and scare your family or friends. A lot of people had actually asked if we were going to elope while we were there (not a chance) but we were tempted to do the fake wedding! We would have gotten a lot of nasty phone calls, though. :)

As our first day and night rolled to an end, we had a nice dinner at the Italian restaurant in the hotel. The Golden Nugget has so many great options to choose from, and the food was amazing.......because of our early flight and the food coma we were in, as soon as dinner was over, we went to bed. Yup, we're that cool.

Day Two: What else would you do in Vegas besides lay by the pool? This was especially sweet because Denver got snow that day - sorry folks. When we arrived at the Nugget pool, we learned that the 3rd floor of the pool was an adults only area called The Hideout. The pool was free, but there is an additional charge if you want a lounge chair or cabana. We opted for one lounge chair, just to have a place to store our items, and then buckets of buckets of beer. The weather was gorgeous, and the water was so peaceful. We wanted to slide down through the infamous shark tank, but it was unfortunately closed for repairs - guess we'll have to go back! The highlight of the pool time? The free spirit of everyone at the pool. Including the dude who had the man thong and no shame on showing it.

After several hours at the pool, we cleaned ourselves up and head out for one last night. We did a little gambling, met up with some friends who live in Vegas for happy hour, and then headed to the Strip! Sort of. We could care less about the strip, but we were trying to connect with some other friends. They had got delayed, so we bounced around on our own. Mainly, we stayed at the Casino Royale because I love that their drinks are cheap (what can I say, I'm cheap) and you still get the Vegas vibe! It didn't take long after that, where we needed to head back to the hotel. It was our last night and we needed some sleep before catching our flight home. Where will my next silent auction 'win' take us?!

Deep Sea Fishing!

When we booked our trip, we knew that one of the adventures we wanted to go on was fishing, and ideally we wanted to catch some salmon! Unfortunately, at this point in the season, it was too early for salmon, but halibut was a popular option, so that's what we chose.

The halibut fishing excursion was another all day event. For a variety of reasons, though, our group was a little 'slow' getting started. It wasn't so much that we were slow, so much as everything we did that morning was just WRONG. Our hotel had a free shuttle 'to town' which would take us to the docks, but somehow we ended up on the wrong shuttle. Really, how does this happen? I'm still not sure any of us have any idea. The shuttle we got on WAS going to the docks, but first they were taking a little detour through the town, with commentary provided. We realized quickly we were on the wrong bus and asked to be dropped off right away. After a bit of begging, the driver grudgingly agreed......sorry! Following our dropoff, we needed to determine where to check in, find our boat, and then head out!

When we booked the fishing excursion, they recommended that we bring our own food and drinks, because it would not be provided. We had purchased these items the night before, but decided we needed more refreshments, thus taking even more time. I'm not even sure I can tell you how much time passed before we FINALLY figured out where we needed to go, then walked up to our boat and our fearless captain, named Neal. Now Neal was about our age, but when we came walking down the dock at around 8am yelling 'Neal!' (you'd think we were drunk), I think he rolled his eyes and tried to call in sick. Sorry bud, you're stuck with us. (Don't worry, by the time the day ended, he was loving us. He even said how much he appreciated a young group, usually he has retirees.) About the time we got settled in, several of us had to take potty breaks. Yup, let's just keep the delays comin'. Truthfully, Neal didn't care. He told us we probably wouldn't get a great fishing spot, and that we still had to return at the same time, but as long as we were cool with our delay, it was okay by him. We were the ones paying for it after all.

I'm not even sure how late we were by the time we got headed out, but it definitely wasn't on time. Then we took this tiny little boat, for what felt like three hours, out into the middle of the ocean, where we got ready to fish. We were going so fast and the boat was so small, the motion wasn't ideal for any of us, but remind yourself - it's part of the bucket list experience!

Let the fishing begin! Here's what I remember about the fishing, it took most of us a lot of time to adjust to the motion of the waves and it took even longer to catch some fish, but sure enough, both worked in our favor eventually. Each of us were allowed to take home two halibut (assuming we caught two each), but one had to be under 28 inches in length. This was the game - could you catch a big one early so we knew we had one?!

First, Neal taught us how to properly reel in a fish. Because the halibut lines are so long and deep, you want to pull the rod up, and while you're reeling in, let the end of the rod make it's way back to the water. He also showed us a belt he had, that you could use for support if the fish was too heavy, and encouraged us to take turns if we needed to. Neal worked fast and furious to keep our poles out and to keep the bait fresh to attract the fish. The first few hours were slow, but toward the end of our trip (naturally) we started reeling some in. We were moving fast, too, so that we could bring in enough for our limit for the day. When it was my turn to reel one in, I recruited Julie to help me since I could only use one foot. Huh?! What are you talking about? Oh yeah, did I forget to mention that during this entire trip, I had a medical boot on my foot? Yup, talk about a new way to travel - quite the adventure! Since I had the boot on my foot, I really couldn't get my feet set to bring the fish in, and with the waves of the ocean, I was constantly scared I would fall overboard. Yes, this was a constant fear in my head that day. Thankfully, I had a great group of friends to help me.....and at the end, I even brought in a nurse shark! We couldn't keep it of course, but that was a fun one to bring in and throw back.


By the time we had to call it a day, we had nine halibut in our cooler! Not quite two per person, but we were VERY happy with our haul! So back to the dock we go....or so we thought. We got a few minutes out and our engine died. Got it up and running and it died again. This happened a few times and we started getting worried. Neal even tried to call some other captains that might be able to pull us in, but because we were so late getting started, we were also late coming back in ,which meant the other boats were already too far gone. Eventually, Neal got the motor running and we were off, on another three hour ride back. Thank goodness, because all we had left to eat at this point were Reese's Peanut Butter Cups, and we gave the last one to Captain Neal for being our hero - ha!

Getting back to the dock, we hauled the fish up where Neal fileted them and we got photos taken. This is also where you can decide if and how much you want to take back with you. Normally it can be pretty expensive to ship the fish home, but again, we were fortunate because Tommy lived in Alaska, we had a solution. The boat company is able to store it over night while they filet it and vacuum pack it, then we took it with us on the train and stored it at Tommy's house, before flying it home with us back to Denver, for free. What a win! And what tasty halibut we had in our freezer for weeks!

The next day was our last in Seward. We actually got some time to enjoy the town, visit a friend of Tommy's and her incredible art studio, Janina Simutis. We strolled through some other sites before boarding the train and heading back to Anchorage. This was the end of the vacation for me, as I was headed to the Anchorage office for work the next day, but I was okay with that! After this fun-filled weekend, I was wiped!

Trains, Whales and Glaciers? Oh My!

As much fun as it is to travel by yourself, and really get to know more about yourself as a person, no one can deny the fun of having friends with you! So when I started planning a second trip to Alaska for work, I decided I needed some friends to come along for the ride! Some Denver friends: Julie, Tiffany, Jeff and April were up for the fun - and April has a childhood friend, Tommy, that lives in Anchorage that we could spend time (and crash) with while we were there.

What made the most sense for us was to head up over Memorial Day weekend. With the holiday, everyone was able to have a long weekend not take quite as much time off. And I planned to spend the weekend exploring with them, and once the workweek hit, they would keep exploring while I hit the office.


The big part of the trip was a long weekend in Seward, Alaska. Seward is a small town in the Kenai Peninsula, about four hours south and east of Anchorage. Because there were six of us making the trip together, a car would be tough. Luckily, the Alaska Railroad is a huge part of the Alaska tourism experience. And with the events and activities we wanted to do, we found a tour option that included rail, hotel and our tours, all in one package. Early in the morning, we boarded the train and took the trip to Seward. What makes the train ride even more incredible is that it goes through a part of the state that the highway doesn't, so you get to see some incredible scenery and views. Seriously, you guys, we wanted to just take pictures every single second of the way it was so stunning. And add to it, there is food and drink on board if you need some refreshments. :)




Once arriving in Seward, we had a tour scheduled to hop on a boat and see the KenaiFjords National Park. We picked this particular tour because it would give us an opportunity to (hopefully) see whales and other mammals, and end with a view of the glaciers - a little mix of everything! Let's just get it over with and say while this tour is incredible.......it was exhausting! Particularly coming off of the
train ride. It's a loooooooong day. Legit, we kept looking at the clock wondering if the trip was almost over because it felt like it was so long. But once again, the views beautiful, the fresh air refreshing (no pun intended), and the wildlife we saw, incredible. And to top it off, we DID see whales, other mammals AND part of the glacier crash into the water. This is one of the things you really think about when you think of Alaska.

But not to mention, May in Alaska and it was cold! So while the fresh air was nice, it was usually brief because we would get so dang chilly, especially with the wind. :)

Final takeaways for this one? Absolutely take the train, but pack some snacks for the boat cruise!

Music City Has Our Hearts!

Our last full day in Nashville had arrived, and to say we were already sad to go home would be an understatement.

From our hotel, we could see a cute little building that we walked by every day called 417 Union Street. Upon closer inspection, we discovered this building was a home turned restaurant, honoring WWII era and the American Civil War. Their specialty is breakfast and lunch, southern style of course, and once again we were not disappointed. One of the best things about this find was really enjoying the fact that there are great gems all around you, just pop in and give on a try!

This day we had 'reserved' to do some bar-hopping on the main strip in Nashville. If you've never been to Nashville before, one of the most amazing things is how great the music is no matter where you go. Because most of our bar-hopping was in the middle of the day, we didn't have to worry about cover charges, but if you go, make sure you have plenty of cash because most of the musicians live off of tips! I really wanted to get a feel for as many bars as possible, so it was pretty typical for me to say 'let's go' after one drink! Bryan was always so bummed - I'm having so much fun! But then he would love the next place just as much as the last!

No trip to Nashville would be complete without a stop at the world famous Tootsie's! Even in the middle of the afternoon, this place was PACKED! We found two seats at a table with a couple of other ladies and asked if we could join them. Naturally, we became fast friends. Turns out, they had driven in from St. Louis, so we told them all about our travel excursion to get there! They were in town because they had some friends playing at the Wild Horse Saloon that night. When I told Bryan that was a place I wanted to visit anyway, it all came together!

The night went on, and made a few other pit stops, including a stop at a sports bar nearby to watch Oregon play (March Madness!) and then headed to the Wildhorse. Our new friends had come to watch a band called McKenzie's Mill, they knew the singers, and what a great band! The music was great and Bryan and I got to show our dance moves on the dance floor - we even got some applause for it! We ran into our new friends, had some drinks with them, hung out with the band and then hit the town some more....it was our last night - go big or go home!

The next morning rolled around and we had a few hours to see the city before heading home. Our last stop of the trip was the Ryman Auditorium. So much history and beauty in this place and it was really special to be in a place where some of the great have performed. I think what is probably one of the best things is how the Ryman is just in the middle of the city. As you're walking down the street, it sort of sneaks up on you out of nowhere, but the stories it can tell!

Nashville was probably one of our best and favorite vacations we had taken. The combination of history and entertainment was so perfect for us and there was so much more that we didn't get to see. Every chance we get, we look at the flight deals to see if we should go back. Nothing planned anytime soon, but we know it will happen again!

Eating Our Way Through Nashville

Our first full day in Nashville, was all about the food - and history! But we both agree we probably gained 10 pounds on this day, and we only had two meals!

Our first stop was a restaurant we had heard about called Biscuit Love. Y'all (yup, I said it), I can't rave about this place enough. It was a short cab ride from downtown and we would honestly make a day trip back just to eat here. The restaurant is set up so that you order, then they set you, and then bring you your food. Because of that, we had to wait in line for a bit of time, but we were able to ask the staff what they recommended. Their top choice? Something not even on the menu. They recommended combining two meals to make what is called the Nasty Princess - it's Nashville hot chicken with biscuits and gravy. I'm drooling just typing about it.....it's so good we took no pictures to prove it - ha!

After breakfast, we took a cab to Centennial Park, which is near Vanderbilt University. The Parthenon is the centerpiece of this park and was created for the Tennessee Centennial Celebration. Obviously, the Parthenon is not the infamous one in Greece, but it is a full-scale replica. The interior is now used as an art museum with several pieces, and the main hall has a reproduction of the Athena Parthenos, which can also be found in Athens. It was nice to get out of downtown and see just a neat piece of history. Unfortunately, we hit some rain while we were there, so our trip was short-lived before heading back to our hotel to clean up.

Our next stop was Printer's Alley. This was a section of bars we had heard was another great piece of history to check out, and as luck would have it, it was just two blocks from our hotel. Printer's Alley was named for just what you would think....it used to be home to large publishing companies. And back when it became a bar district, liquor consumption was illegal in Nashville, but many bars served it anyway. What I love about this little spot is that the entrance to the bars really is in the alley, not the main streets....almost gives you the speakeasy feel of getting special permission to enter.

We decided to go to a place called Bourbon Street Blues and Boogie Bar and despite not having a reservation (starting around 7pm, you need on), we were able to get a seat right up front, because we were early enough. That didn't matter, though. A band called the Corey Mac Band was playing and they were incredible! The music was just what you would expect, loud, lively and incredible. After a couple of hours here, we unfortunately had to leave. In part, the folks that had a reservation would be coming soon, but also, we had a dinner reservation to get to.

Off to Puckett's we went. This came highly recommended from several people before heading to Nashville and we were fortunate again that (this location) was also just two blocks from our hotel. By this point, we were finally ready to eat again after the amazing breakfast we had, and it's a good thing because these meals aren't small! The piggy mac - pulled pork with mac and cheese! Go here and order it! Just good food, and again, because we're in Nashville, live music with another great band. After the show, we had to walk back to the hotel and call it a night...we were too full to do anything else!

Spring Break in Nashville - March 2016

Spring break 2016, Bryan and I were determined to go on a vacation that for just us. Up until this point, most of our trips together had been for family visits or friend's weddings. Not that they haven't been incredible, but we wanted something for us. We both had always talked about Nashville, so that was the plan. The morning before our trip, we got a snowstorm in

Denver, which isn't uncommon for spring. The storm dumped down inches of snow and cancelled a lot of flights that day, but it ended about mid-day so we knew our flights would be fine. Sure enough, they were......sort of. We arrived at the airport early, and because we had one of the first flights out that morning, there were a lot of people still in line, trying to reschedule from the day before. We found a trick to get our bags checked, and breeze through security so we could get breakfast, and get on the plane. Shortly after buckling in, I fell asleep. I was so excited the night before, I could hardly sleep, so I passed out right away.

About an hour later, I woke up to discover, we still hadn't left DIA. I broke down in tears - mainly from exhaustion. We had a layover in St. Louis, and I knew this delay would mess things up. We had spent so much money on the trip, I didn't want to miss a beat. Eventually, our flight got on it's way and they told us they would help us resolve it. As it turns out, there were several people from our DEN>STL flight also catching the flight to Nashville, so they held it. But we took so long, they ended up finally having to leave. When we landed in St. Louis they said they had re-booked us to go through Houston and then Nashvillle - landing at 9pm.....10 hours after our original landing! We decided this was just not worth it. We booked a rental car, pulled our bags off of the plane (which almost didn't happen in time) and hit the road! From St Louis to Nashville it was only a five hour drive, through Kentucky which we had never been - let's keep the adventure rolling! 

When we finally pulled up to our Hilton hotel in downtown Nashville, we were pretty exhausted! But, time for the party to start! We took a quick shower and headed out. We had never intended to get a rental car because we knew we would walk everywhere. Our first stop is a very popular place on Broadway, called Boot Country. Every day they have a sale where if you buy one pair of boots, you can get two for free!! We knew this going in so made it our first stop so we could wear our boots all weekend long. From there, we made a few other stops to have some drinks and find some dinner. We ate some incredible BBQ at Rippy's on Broadway and then made our way back to the hotel. By this point, it was fairly late and we were exhausted so we settled in for day two.......

Fort Lauderdale, Florida - October 2015





October of 2015 took us to Fort Lauderdale, Florida for the wedding of Bryan's former roommates - Brett and Amy. Neither of us had been to Fort Lauderdale before, and we were looking forward to the long weekend with so many friends from Colorado.




We stayed at the Hilton that was about 1/2 mile from the beach and we had the most incredible view from our hotel room. On our first afternoon there, we brought some beers up from the bar and sat on the patio enjoying our view. Later that day, we walked to the beach where Brett and Amy held their 'rehearsal dinner'. Because they were getting married on a boat (yup, you read that right), they didn't need a traditional rehearsal so brought everyone to the beach instead. How can you beat that?

The next day was the big day! Our hotel also happened to have the dock for the boat, which is where all of the fun would take place. We had four hours on board this amazing yacht while we had dinner, dancing, drinks and made our way around Fort Lauderdale! A lot of shenanigans ensued - of course.





The next day, several of us from Denver had the same flight back to Denver which was late at night, so we had the day to explore. Exploring for us, meant bar hopping on the beach. We had to kick the hangover by just continuing to drink! One drink we enjoyed most of the weekend was Yuengling, a beer that cannot be found west of the Mississippi......we got our fair share!

Along the way, we found some other great bars, made some new friends, and enjoyed the beautiful weather! It was a long weekend of cocktails, a few too many, but a weekend we'll never forget!
